
Just a few years ago fish tacos were mainly a regional food found mostly in California and parts of Mexico but over the past few years they have gained popularity and are popping up on menus from Vancouver where my sister had them to Alabama where we are having them. This version is grilled, sereved with a Southwest Salw and are perfect for a light summer dinner or outdoor party. Since the temps here have reached into the 100's today I thought these fish tacos fit the bill for dinner tonight.
